Rosalind’s Red Cabbage Salad

Serves 8

Ingredients

  • 1 red cabbage, sliced
  • A few carrots, grated
  • A few apples, grated
  • Raisins – a large handful
  • Juice of half an orange or a tablespoon of orange juice
  • 1 teaspoon olive oil
  • 1 teaspoon cider vinegar
  • Pinch of salt
  • Pinch of brown sugar
  • Torn up mint tips (optional)

 

Method

Soak the raisins in the orange juice for about 15 minutes.  Strain the raisins, reserving the juice.  Mix the raisins with the sliced cabbage, grated carrot and grated apple.

To make the marinade, mix 1 teaspoon of the reserved orange juice with the olive oil and cider vinegar.  Add a pinch of salt and pinch of brown sugar, and stir together.

To serve, pour the marinade over the salad.  If you have any, toss in the torn up mint tips.
