Ingredients
- 400g rhubarb
- 1 tbsp orange juice (or water)
- 2 tbsp caster sugar (35g)
- 107g plain flour
- 75g butter, diced
- 75g ground almonds
- 50g soft brown sugar
Method
Pre-heat the oven to 190 C fan.
Utensils: shallow dish, around 1 litre capacity.
Chop the rhubarb into half inch chunks and put in a saucepan with the orange juice. Cook over a low heat until the rhubarb has softened but still has a bit of shape. Put the rhubarb into the bottom of a shallow dish and leave to cool whilst you make the crumble.
To make the crumble mixture, whizz all the other ingredients in a food processor, or rub the butter into the dry ingredients with your finger-tips.
Pour the crumble mixture over the rhubarb, and bake in the pre-heated oven for 25 minutes, or until golden brown.
